- 1 pound ground beef
- 2 cups low sodium beef broth
- One 16-ounce jar El Picante salsa
- One 15.25 ounce can corn (drained)
- One 1-ounce packet taco seasoning
- 1 tablespoon minced onion
- 1 1/2 cups instant rice
- 1 cup shredded cheddar cheese

Directions
- n a large skillet, cook the ground beef over medium heat until fully browned, then drain off any excess grease.
- Stir in the beef broth, El Picante salsa, drained corn, taco seasoning, and minced onion. Bring the mixture to a boil.
